Apricot Chicken



  • 1 fryer, cut up
  • 1/4 cup flour
  • 2 tablespoons vegetable oil
  • 1/3 cup teriyaki sauce
  • 2 tablespoons apricot preserves
  • 1 tablespoon minced onion
  • 1 tablespoon lemon juice


  1. Coat chicken with flour; brown slowly in hot oil.
  2. Combine remaining ingredients. Pour evenly over chicken.
  3. Cover, reduce heat, and simmer 45 minutes, or until chicken is tender, turning over once.
