Chicken Breasts with Chipotle Orange Sauce




  1. Sprinkle chicken breasts with 1/2 teaspoon salt.
  2. Heat butter in a skillet and brown the chicken. Remove.
  3. Add flour, sugar, spices, chiles and remaining teaspoon salt to drippings in skillet and stir until it forms a paste.
  4. Gradually stir in orange juice. Cook this mixture, stirring constantly, until mixture thickens and comes to boil.
  5. Add the chicken breasts and cover. Simmer over low heat until chicken is tender, about 30-40 minutes.
  6. Remove chicken to serving platter.
  7. Serve with hot cooked rice and sauce.
  8. Garnish with orange slices and cilantro.
