Apricot Lamb with Ginger


  • 1 onion, sliced
  • 1 pound lean lamb, cubed
  • 1 tablespoon ground ginger
  • 1/4 teaspoon garlic powder
  • 1 1/2 cups apricot nectar


  1. Heat oil in a heavy nonstick skillet over medium high heat. Sauté onion and lamb 2-3 minutes, until lamb is browned.
  2. Add remaining ingredients and reduce heat to low. Cover and simmer gently 40 minutes, or until lamb is tender.
