Dried Bean Patties

Ingredients

  • 2 cups cooked dried beans
  • 1 chopped onion
  • 1/4 cup chopped parsley
  • 2 egg yolks
  • 2 tablespoons cream
  • 1/4 teaspoon pepper
  • 1 teaspoon salt
  • All-purpose flour

Instructions

  1. Grind and mash beans.
  2. Add onion and parsley.
  3. Beat and add the egg yolks, then cream, pepper and salt.
  4. Shape into balls and flatten.
  5. Dip into flour.
  6. Chill for 1 hour or more.
  7. Sauté in butter until brown.
