Vegetable Croquettes

Ingredients

  • 3 cups mashed potatoes*
  • 1 cup minced celery
  • 2 onions, grated
  • 1 cup grated carrots
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 egg
  • Bread crumbs

Instructions

  1. Mix ingredients together and shape into croquettes.
  2. Dip into beaten egg and roll in dry bread crumbs.
  3. Chill.
  4. Fry in deep fat until golden brown.

Notes

* Mash without using milk or any liquid.
