Vegetable Croquettes
Ingredients
- 3 cups mashed potatoes*
- 1 cup minced celery
- 2 onions, grated
- 1 cup grated carrots
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 egg
- Bread crumbs
Instructions
- Mix ingredients together and shape into croquettes.
- Dip into beaten egg and roll in dry bread crumbs.
- Chill.
- Fry in deep fat until golden brown.
Notes
* Mash without using milk or any liquid.
