Vegetarian Meatballs
Yield: 6 to 8 servings
Ingredients
- 2 eggs
- 6 tablespoons water
- 2 teaspoons soy flour
- 1 cup cream-style cottage cheese
- 1/2 cup chopped onion
- 1 teaspoon basil
- 1/2 teaspoon salt
- 1 cup chopped walnuts or pecans
- 2 cups dried bread crumbs
- 2 cups mozzarella cheese
- 3 1/2 cups spaghetti sauce
Instructions
- Beat eggs, water, soy flour, cottage cheese and seasonings.
- Stir in bread crumbs and nuts.
- Shape into walnut-size balls.
- Put a thin layer of spaghetti sauce in the bottom of a 13 x 9 inch baking dish.
- Line meatballs on sauce in pan.
- Pour remaining sauce over meatballs and sprinkle cheese over all.
- Bake 45 minutes at 350 degrees F.
