Vegetarian Meatballs



  • 2 eggs
  • 6 tablespoons water
  • 2 teaspoons soy flour
  • 1 cup cream-style cottage cheese
  • 1/2 cup chopped onion
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • l cup chopped walnuts or pecans
  • 2 cups dried bread crumbs
  • 2 cups mozzarella cheese
  • 3 1/2 cups spaghetti sauce


  1. Beat eggs, water, soy flour, cottage cheese and seasonings.
  2. Stir in bread crumbs and nuts.
  3. Shape into walnut-size balls.
  4. Put a thin layer of spaghetti sauce in the bottom of a 13 x 9-inch baking dish.
  5. Line meatballs on sauce in pan.
  6. Pour remaining sauce over meatballs and sprinkle cheese over all.
  7. Bake 45 minutes at 350 degrees F.

Serves 6 to 8.
