Brazilian Meat Loaf

Ingredients

  • 1 egg, beaten
  • 3/4 cup strong, cold coffee
  • 1/2 teaspoon oregano
  • 1/2 teaspoon marjoram
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 2 cups soft bread crumbs
  • 1 onion, minced
  • 1 tablespoon chopped celery
  • 2 pounds lean beef, ground

Instructions

  1. Heat oven to 350 degrees F.
  2. Combine egg, coffee, oregano, marjoram, salt, pepper and bread crumbs; let stand for 10 minutes.
  3. Add onion, celery and beef; mix well.
  4. Pack into greased 9 x 5-inch loaf pan.
  5. Bake for 1 1/2 hours.

Makes 8 servings.
