Calypso Meat Loaf

Ingredients

  • 1 1/2 pounds ground round
  • 1/2 cup tomato sauce
  • 1 cup soft bread crumbs
  • 1/4 cup egg substitute
  • 2 tablespoons minced onion
  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon ground black pepper
  • Cooking spray
  • 1/2 cup plus 2 tablespoons tomato sauce
  • 1/4 cup crushed pineapple in juice, drained
  • 2 tablespoons minced onion
  • 1 1/2 teaspoons brown sugar
  • 1 1/2 teaspoons lime juice
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon dry mustard

Instructions

  1. Combine first 7 ingredients. Shape mixture into an 8 x 4-inch loaf; place on rack in a roasting pan coated with cooking spray.
  2. Bake at 350 degrees F for 1 hour and 5 minutes.
  3. Combine 1/2 cup plus 2 tablespoons tomato sauce and remaining ingredients.
  4. Pour over meat loaf, and bake an additional 5 minutes.
