Calypso Meat Loaf
Yield: 8 servings
Ingredients
- 1 1/2 pounds ground round
- 1/2 cup tomato sauce
- 1 cup soft bread crumbs
- 1/4 cup egg substitute
- 2 tablespoons minced onion
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon ground black pepper
- Cooking spray
- 1/2 cup + 2 tablespoons tomato sauce
- 1/4 cup crushed pineapple in juice, drained
- 2 tablespoons minced onion
- 1 1/2 teaspoons brown sugar
- 1 1/2 teaspoons lime juice
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon ground allspice
- 1/8 teaspoon salt
- 1/8 teaspoon ground ginger
- 1/8 teaspoon dry mustard
Instructions
- Combine first 7 ingredients. Shape mixture into an 8 x 4 inch loaf; place on rack in a roasting pan coated with cooking spray.
- Bake at 350 degrees F for 1 hour and 5 minutes.
- Combine 1/2 cup + 2 tablespoons tomato sauce and remaining ingredients.
- Pour over meat loaf, and bake an additional 5 minutes.
