Filipino Meat Loaf
- 1 1/2 pounds ground beef
- 1 medium onion, chopped
- 3 eggs
- 2 medium potatoes, cooked and chopped
- 1 sweet potato, cooked and chopped
- 3 tablespoons cornstarch
- 1/4 cup ketchup
- Salt and pepper, to taste
- Mix beef, onion, eggs, potatoes, sweet potato and cornstarch.
- Place in casserole; shape into loaf.
- Pour ketchup over loaf; season with salt and pepper.
- Bake at 325 to 350 degrees F until done.
