Hi Ho Meat Loaf
Yield: 6 to 8 servings
Ingredients
- 1 1/2 cups crushed Hi Ho Crackers
- 1/4 cup minced onion
- 1/4 cup minced green bell pepper
- 2 eggs, slightly beaten
- 1 1/2 pounds lean ground beef
- 1/2 pound pork sausage
- 2 tablespoons grated horseradish
- 1 tablespoon salt
- 1/4 cup milk
- 1/2 cup ketchup
Instructions
- Heat oven to 350 degrees F. Grease a 9 x 5 inch loaf pan.
- Crush Hi Ho Crackers medium-fine by rolling on sheet of wax paper with rolling pin.
- In medium-size bowl, combine cracker crumbs, onion, bell pepper, eggs, beef, sausage, horseradish, salt, milk and 1/4 cup ketchup. Mix well and press into prepared loaf pan. Spread top with remaining 1/4 cup ketchup.
- Bake for 1 hour.
- Remove to heated platter, slice and serve hot; or chill, slice and serve cold.
