Hi Ho Meat Loaf


  • 1 1/2 cups crushed Hi Ho Crackers
  • 1/4 cup minced onion
  • 1/4 cup minced green bell pepper
  • 2 eggs, slightly beaten
  • 1 1/2 pounds lean ground beef
  • 1/2 pound pork sausage
  • 2 tablespoons grated horseradish
  • 1 tablespoon salt
  • 1/4 cup milk
  • 1/2 cup ketchup


  1. Heat oven to 350 degrees F. Grease a 9 x 5-inch loaf pan.
  2. Crush Hi Ho Crackers medium-fine by rolling on sheet of wax paper with rolling pin.
  3. In medium-size bowl, combine cracker crumbs, onion, green pepper, eggs, beef, sausage, horseradish, salt, milk and 1/4 cup ketchup. Mix well and press into greased loaf pan. Spread top with remaining 1/4 cup ketchup.
  4. Bake for 1 hour.
  5. Remove to heated platter, slice and serve hot; or chill, slice and serve cold.

Yield: 6 to 8 servings
