Lamb Meat Loaf

Ingredients

  • 6 tablespoons minced onion
  • 2 tablespoons margarine
  • 1 1/2 pounds ground lamb
  • 3/4 cup bread crumbs
  • 2 1/4 teaspoons salt
  • 1/8 teaspoon pepper
  • 2 tablespoons chopped green bell pepper
  • 1 tablespoon minced parsley
  • 1 egg
  • 1/2 cup milk

Instructions

  1. Heat oven to 350 degrees F. Lightly grease 9 x 5-inch loaf pan.
  2. Sauté onion in margarine until lightly browned. Combine with remaining ingredients; mix well. Fill loaf pan with mixture.
  3. Bake for 1 hour.
  4. Unmold on platter. If desired, spread top of loaf with marmalade.
  5. Serve with carrots and white turnips.

Yield: 6 servings
