Meat Loaf Baked in Sauce

Ingredients

Meat Loaf

  • 2 pounds ground beef*
  • 1 medium size potato
  • 2 eggs, lightly beaten
  • 1/4 cup melted butter
  • 1 teaspoon prepared horseradish
  • 2 tablespoons instant minced onion
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon MSG
  • 1 tablespoon seasoned salt
  • 3 tablespoons ketchup
  • 1/4 cup milk or water

Zesty Tomato Sauce

  • 2 teaspoons beef flavor base
  • 1 cup hot water
  • 1 (6 ounce) can tomato paste
  • 1/2 cup chili sauce
  • 2 teaspoons instant minced onion
  • 1/4 teaspoon ground oregano
  • 1/8 teaspoon ground marjoram
  • Dash of nutmeg
  • 1/4 teaspoon black pepper
  • 1 teaspoon granulated sugar

Instructions

Meat Loaf

  1. Scrub uncooked potato and grate, peel and all (about 1 cup after grating).
  2. Mix all ingredients well, being careful not to over-mix. Shape into a loaf in a shallow baking pan. Spoon Zesty Tomato Sauce over loaf.
  3. Bake at 350 degrees F for 1 hour and 15 minutes.

Zesty Tomato Sauce

  1. Dissolve beef flavor base in hot water.
  2. Add to remaining ingredients and mix well. This makes a thick sauce. If you prefer a thinner sauce, add 1/4 to 1/2 cup additional water.

Notes

* For a good meat loaf, use freshly-ground beef.
