Meat Loaf Baked in Sauce
Yield: 6 to 8 servings
Ingredients
Meat Loaf
- 2 pounds ground beef*
- 1 medium size potato
- 2 eggs, lightly beaten
- 1/4 cup melted butter
- 1 teaspoon prepared horseradish
- 2 tablespoons instant minced onion
- 1/8 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon MSG
- 1 tablespoon seasoned salt
- 3 tablespoons ketchup
- 1/4 cup milk or water
Zesty Tomato Sauce
- 2 teaspoons beef flavor base
- 1 cup hot water
- 1 (6 ounce) can tomato paste
- 1/2 cup chili sauce
- 2 teaspoons instant minced onion
- 1/4 teaspoon ground oregano
- 1/8 teaspoon ground marjoram
- Dash of nutmeg
- 1/4 teaspoon black pepper
- 1 teaspoon granulated sugar
Instructions
Meat Loaf
- Scrub uncooked potato and grate, peel and all (about 1 cup after grating).
- Mix all ingredients well, being careful not to over-mix. Shape into a loaf in a shallow baking pan. Spoon Zesty Tomato Sauce over loaf.
- Bake at 350 degrees F for 1 hour and 15 minutes.
Zesty Tomato Sauce
- Dissolve beef flavor base in hot water.
- Add to remaining ingredients and mix well. This makes a thick sauce. If you prefer a thinner sauce, add 1/4 to 1/2 cup additional water.
Notes
* For a good meat loaf, use freshly-ground beef.
