Pork and Apple Meatloaf
A delicious ground pork and apple meatloaf topped with bacon.
Ingredients
- 1 1/2 pounds ground lean pork
- 1 1/2 cups McIntosh apples, peeled and grated (about 3 apples)
- 1/2 cup bread crumbs
- 1 tablespoon chili powder
- 1 teaspoon dry mustard
- 1 teaspoon Worcestershire sauce
- Salt and pepper
- 7 slices bacon
- 2 tablespoons apple jelly, melted (optional)
- Applesauce
Instructions
- Put the rack in the middle of oven. Heat to 350 degrees F. Put parchment paper or foil paper on a baking sheet.
- In a bowl, mix well the pork, apples, bread crumbs, spices and Worcestershire sauce. Add salt and pepper generously.
- With the meat mixture, shape a 10 x 4 inch loaf on the baking sheet.
- Spread bacon slices, side by side diagonally on the loaf in a way to cover the meat.
- Bake for about 1 hour. If using a meat thermometer, it should read 180 degrees F (82 degrees C).
- Remove from the oven and baste with apple jelly, if using. End the cooking under the broiler until well golden.
- Top with applesauce.
- Serve with mashed potatoes and green beans.
