Pork and Apple Meatloaf

A delicious ground pork and apple meatloaf topped with bacon.

Pork and Apple Meatloaf

Ingredients

  • 1 1/2 pounds ground lean pork
  • 1 1/2 cups McIntosh apples, peeled and grated (about 3 apples)
  • 1/2 cup bread crumbs
  • 1 tablespoon chili powder
  • 1 teaspoon dry mustard
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper
  • 7 slices bacon
  • 2 tablespoons apple jelly, melted (optional)
  • Applesauce

Instructions

  1. Put the rack in the middle of oven. Heat to 350 degrees F. Put parchment paper or foil paper on a baking sheet.
  2. In a bowl, mix well the pork, apples, bread crumbs, spices and Worcestershire sauce. Add salt and pepper generously.
  3. With the meat mixture, shape a 10 x 4 inch loaf on the baking sheet.
  4. Spread bacon slices, side by side diagonally on the loaf in a way to cover the meat.
  5. Bake for about 1 hour. If using a meat thermometer, it should read 180 degrees F (82 degrees C).
  6. Remove from the oven and baste with apple jelly, if using. End the cooking under the broiler until well golden.
  7. Top with applesauce.
  8. Serve with mashed potatoes and green beans.
