Apricot Glazed Pork Roast
- 1 cup chicken broth
- 1 (18 ounce) jar apricot preserves
- 1/4 cup onion, finely chopped
- 2 tablespoons Dijon mustard
- Salt and pepper
- 1 (4 pound) boneless pork loin roast
- Combine first 4 ingredients and mix well. Sprinkle pork with salt and pepper.
- Place pork in a shallow baking pan, spread glaze mixture over pork and bake at 350 degrees F for about 2 hours or until pork is no longer pink and juices run clear.
