Pork Loin Cordon Bleu

  • 8 thinly sliced pork loins
  • 8 slices boiled ham
  • 8 slices Swiss cheese
  • 1/2 cup olive oil
  • 1/2 cup chicken stock
  • 1 small shallot, diced
  • 1/2 cup Pere Magloire Calvados

  2. In a large pan, heat the olive oil over medium high heat. Reduce to a simmer and cook the pork for about 1 1/2 minutes on each side.
  3. Add the shallot and cook for another minute.
  4. Next, add the chicken stock and place in the oven for 6 minutes at 300 degrees F.
  5. Serve immediately.
