Ducks with Orange Sauce

Ingredients

  • 4 ducks
  • 4 cups orange juice
  • 2 cups brown sugar
  • 1 cup shredded orange rind
  • 8 tablespoons drippings
  • 5 1/3 tablespoons all-purpose flour
  • 4 tablespoons Cointreau

Instructions

  1. Roast ducks at 325 degrees F for about 3 hours, basting often.
  2. Pour off and reserve excess dressings.
  3. Heat orange juice, brown sugar, orange rind and drippings in saucepan. Add flour and cook slowly until sauce thickens. Pour sauce over ducks and return them to the oven. Continue basting ducks while cooking, about 1 hour more.
  4. When done, add Cointreau to sauce in pan and serve.
