Lime Duck



  • 2 ducks
  • 4 strips bacon
  • 1 cup fresh lime juice
  • 1/4 to 1/2 cup orange juice

  1. Marinate ducks in lime juice for 2 hours.
  2. Place ducks and marinade in Dutch oven, salt and pepper lightly, and bake at 325 degrees F for 2 1/2 to 3 hours, until duck almost falls off bone. Baste with orange juice when ducks become dry (about the last hour of cooking).
  3. About 30 minutes before serving, cover each duck with 2 strips of bacon.

Serves 2 to 4.
