Smothered Dove
Serves 4.
Ingredients
- 12 doves
- 6 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1/2 cup sherry wine
- Salt and pepper, to taste
Instructions
- Brown doves in heavy skillet or Dutch oven in melted butter.
- Remove doves to baking dish, breast down.
- Add flour to skillet and stir well. Slowly add chicken broth, sherry, salt and pepper; blend well and pour over doves.
- Cover baking dish and bake at 350 degrees F at least 1 hour.
- Serve over cooked rice.
