Ingredients

Crust

  • 1/2 cup butter
  • 1/4 cup confectioners' sugar
  • 1 cup all-purpose flour
  • 1 pinch salt

Filling

  • 2 eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 3 tablespoons lemon juice
  • 1 teaspoon grated lemon rind
  • 1/4 teaspoon baking powder

Topping

  • Confectioners' sugar

Instructions

  1. Crust: Cream butter and confectioners' sugar. Add flour and salt.
  2. Press into an 8-inch square pan.
  3. Bake crust at 350 degrees F for about 20 minutes.
  4. Filling: Combine the eggs, sugar, flour, lemon juice, lemon rind and baking powder. Pour over hot crust.
  5. Bake 20 - 25 minutes.
  6. Cool in pan.
  7. Topping: Sprinkle with confectioners' sugar. Cut into squares. Store in tin box between layers of wax paper.
