Lemon Love Notes

Ingredients

Crust

  • 1/2 cup butter
  • 1/4 cup confectioners' sugar
  • 1 cup all-purpose flour
  • 1 pinch salt

Filling

  • 2 eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 3 tablespoons lemon juice
  • 1 teaspoon grated lemon rind
  • 1/4 teaspoon baking powder

Topping

  • Confectioners' sugar

Instructions

Crust

  1. Cream butter and confectioners' sugar. Add flour and salt.
  2. Press into an 8 inch square pan.
  3. Bake crust at 350 degrees F for about 20 minutes.

Filling

  1. Combine the eggs, sugar, flour, lemon juice, lemon rind and baking powder. Pour over hot crust.
  2. Bake for 20 to 25 minutes.
  3. Cool in pan.

Topping

  1. Sprinkle with confectioners' sugar. Cut into squares. Store in tin box between layers of wax paper.
