Lemon Love Notes
Ingredients
Crust
- 1/2 cup butter
- 1/4 cup confectioners' sugar
- 1 cup all-purpose flour
- 1 pinch salt
Filling
- 2 eggs
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 3 tablespoons lemon juice
- 1 teaspoon grated lemon rind
- 1/4 teaspoon baking powder
Topping
Instructions
Crust
- Cream butter and confectioners' sugar. Add flour and salt.
- Press into an 8 inch square pan.
- Bake crust at 350 degrees F for about 20 minutes.
Filling
- Combine the eggs, sugar, flour, lemon juice, lemon rind and baking powder. Pour over hot crust.
- Bake for 20 to 25 minutes.
- Cool in pan.
Topping
- Sprinkle with confectioners' sugar. Cut into squares. Store in tin box between layers of wax paper.
