Mother's Day Recipes
Orange Coconut Squares
Yield: about 2 dozen squares
Ingredients
Base
- 1/2 cup butter
- 1/2 cup brown sugar
- 1 cup all-purpose flour
Filling
- 1 cup brown sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs, beaten
- 1 cup coconut
- 1 cup chopped pecans (optional)
- 1 teaspoon vanilla extract
Icing
- 1 1/2 cups confectioners' sugar
- 2 tablespoons orange juice
- 1 tablespoon lemon juice
- Grated rind of 1 lemon
Instructions
- Combine Base ingredients and spread over the bottom of a buttered 9 x 13 inch glass baking pan. Bake at 350 degrees F for 15 minutes.
- For the Filling, combine brown sugar, flour, baking powder and salt; add to beaten eggs, coconut, nuts and vanilla extract. Spread over hot bottom layer. Return to oven and bake 15 minutes more at 350 degrees F.
- Combine Icing ingredients and ice while hot. Cool; cut into squares.
