Orange Coconut Squares

Ingredients

Base

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour

Filling

  • 1 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1 cup coconut
  • 1 cup chopped pecans, optional
  • 1 teaspoon vanilla extract

Icing

  • 1 1/2 cups confectioners' sugar
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • Grated rind of 1 lemon

Instructions

  1. Base: Combine and spread over bottom of buttered 9 x 13-inch glass baking pan. Bake at 350 degrees F for 15 minutes.
  2. Filling: Combine brown sugar, flour, baking powder and salt; add to beaten eggs, coconut, nuts and vanilla extract. Spread over hot bottom layer. Return to oven and bake 15 minutes more at 350 degrees F.
  3. Icing: Combine and ice while hot. Cool; cut into squares.

Yield: about 2 dozen squares
