Mother's Day Recipes
Gingered Fresh Fruit Salad
- 1/4 cup honey
- 2 teaspoons grated gingerroot
- 1/2 teaspoon grated lime peel
- 3 tablespoons fresh lime juice
- 2 cups watermelon cubes
- 2 cups cantaloupe cubes
- 2 cups fresh pineapple cubes
- 2 cups seedless green grapes
- 1 pint (2 cups) fresh raspberries
- In a 1 cup microwave-safe measuring cup, combine all dressing ingredients; mix well. Microwave on HIGH for 30 to 45 seconds or until thoroughly heated.
- Cool for 15 minutes or until completely cooled.
- In very large bowl, combine all salad ingredients. Pour dressing over fruit; toss gently to coat.
