- 1 cup All-Bran
- 2 eggs
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 cup sugar-free applesauce
- 1/8 teaspoon ground ginger (optional)
- 1/2 cup dry milk powder
- 3 packages sweetener
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/8 teaspoon nutmeg (optional)
- Mix dry ingredients in bowl; add wet ingredients and mix thoroughly.
- Bake in muffin pans lined with paper muffin cups at 350 degrees F for 20 minutes.
Yield: 8 large muffins
