Tomato Sauce

Ingredients

  • 1 (35 ounce) can Italian tomatoes
  • 1 (6 ounce) can tomato paste
  • 1 bay leaf
  • 1 teaspoon oregano
  • 1 1/2 teaspoons basil
  • 1 large clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 peeled carrot
  • 2 tablespoons chopped green pepper

Instructions

  1. Combine all ingredients in a heavy saucepan. Bring to a simmer, then simmer uncovered for 30 minutes.
  2. Remove and discard carrot.

Yield: 4 cups
