Iced Almonds



  • 1/4 cup butter
  • 2 1/2 cups whole unblanched almonds
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract


  1. In a heavy saucepan, melt butter over medium-high heat Add almonds and sugar.
  2. Cook and stir constantly for 7-8 minutes until syrup is golden brown.
  3. Remove from heat and stir in vanilla extract.
  4. Immediately drop by clusters onto a greased baking sheet.
  5. Let cool.
  6. Store in airtight container.
