Autumn Cheesecake

  • 1 cup Graham cracker crumbs
  • 1/2 cup finely chopped pecans
  • 3 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup margarine, melted


  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 teaspoon vanilla extract
  • 2 eggs


  • 4 cups thin peeled apple slices
  • 1/3 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup chopped pecans


  1. Mix ingredients for crust and press into bottom of Springform Pan.
  2. Bake for 10 minutes at 325 degrees F.
  3. Beat cream cheese, sugar and vanilla extract at medium speed with electric mixer until well blended. Add eggs one at a time, mixing at low speed after each addition until well blended; pour over crust.
  4. Toss apples combined with sugar and cinnamon, spoon apple mixture over cream cheese layer, sprinkle with pecans.
  5. Bake for 1 hour and 10 minutes or until center is set.
  6. Run knife around edge of pan to loosen cake.
  7. Refrigerate for 4 hours or overnight.
