Banana Pecan Squares
Yield: 16 servings
Ingredients
- 1/2 cup butter or margarine, softened
- 3/4 cup sugar
- 1 egg
- 1 cup mashed ripe banana (about 2 medium bananas)
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoons baking soda
- 1/2 teaspoons salt
- 1/2 cup chopped pecans
- Pecan halves (optional)
Instructions
- Heat oven to 350 degrees F.
- In large mixing bowl, beat butter and sugar at medium speed of electric mixer until light and fluffy. Blend in egg, banana and vanilla extract.
- In medium bowl, combine flour, baking soda and salt. Add to butter mixture; beat until well blended. Stir in chopped pecans. Spread batter into greased 9-inch square baking pan. Arrange pecan halves on top, if desired.
- Bake for 25 minutes or until center is set.
- Cool completely; cut into squares.
