Banana Pecan Squares

Ingredients

  • 1/2 cup butter or margarine, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 cup mashed ripe banana (about 2 medium bananas)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 1/2 cup chopped pecans
  • Pecan halves (optional)

Instructions

  1. Heat oven to 350 degrees F.
  2. In large mixing bowl, beat butter and sugar at medium speed of electric mixer until light and fluffy. Blend in egg, banana and vanilla extract.
  3. In medium bowl, combine flour, baking soda and salt. Add to butter mixture; beat until well blended. Stir in chopped pecans. Spread batter into greased 9-inch square baking pan. Arrange pecan halves on top, if desired.
  4. Bake for 25 minutes or until center is set.
  5. Cool completely; cut into squares.
