Chicken Caesar Salad

Yield: 4 to 6 servings

Ingredients

  • 4 boneless, skinless chicken breast halves, grilled broiled or baked
  • 2 heads romaine lettuce, torn into pieces (about 10 cups)
  • 2 hard-cooked eggs, finely chopped
  • 1/2 cup chopped red onion
  • 1/2 cup Caesar salad dressing
  • 1 1/2 cups seasoned croutons
  • 1 cup (4 ounces) shredded Parmesan cheese

Instructions

  1. Slice cooked chicken into bite-size pieces.
  2. In salad bowl, combine chicken, lettuce, eggs and onion. Pour dressing over; toss until well coated.
  3. Add croutons and cheese; toss lightly.
