Creamy Lemon Bars

Ingredients

Crust

  • 4 cups vanilla wafers
  • 1/3 cup pecans, finely chopped
  • 1/3 cup butter or margarine, melted
  • 1 tablespoon granulated sugar

Filling

  • 16 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 lemon

Instructions

  1. Heat oven to 350 degrees F.
  2. Using food chopper, finely chop wafers and pecans. Reserve 1/2 cup.
  3. In bowl, combine chopped wafers, nuts and melted butter. Press onto bottom of 9 x 13 inch baker.
  4. In bowl combine cream cheese, sugar and egg. Using lemon zester/scorer, zest 1 tablespoon lemon peel.
  5. Using lemon aid, squeeze 3 tablespoons of lemon juice; add peel and juice to cream cheese. Cream mixture until smooth using wooden spoon. Using super scraper, spread over crust. Sprinkle with reserved 1/2 cup chopped wafers.
  6. Bake for 20 to 25 minutes or until set. Cool.
