Fruit Jewels
You can mix and match any of the fruits with any flavor gelatin, but the jeweled
appearance of matching fruit and gelatin colors looks best. For example, use green
grapes with lime flavor gelatin, strawberries with strawberry flavor gelatin or
pineapple tidbits with lemon flavor gelatin.
Ingredients
- 2 (3 ounce) packages gelatin dessert - choose 2 of your favorite flavors
- 1 1/3 cups boiling water
- 2/3 to 1 cup your choice fruit (fresh small halved strawberries, blueberries or seedless grapes, or canned mandarin orange segments or pineapple tidbits, drained
Instructions
- Empty 1 package of gelatin into 1-quart bowl. Pour 2/3 cup boiling water
into bowl and stir until gelatin is completely dissolved, about 3 minutes.
- Place 1 to 3 pieces of fruit (depending on size) in each of 12 cups of nonstick
mini muffin pan. Pour gelatin over fruit. (The fruit will float to the top of
the cup.)
- Repeat steps #1 and #2 with the second package of gelatin, remaining 2/3
cup boiling water and fruit to fill remaining 12 cups of mini muffin pan.
- Refrigerate 2 hours or until firm.
- Run flat end of citrus peeler or small, plastic knife around cup to loosen
gelatin snack.
