Nutty Pineapple Slaw
Ingredients
- 2 1/2 cups shredded cabbage
- 1 1/4 cups shredded red cabbage
- 3/4 cup chopped red bell pepper
- 8 ounces canned pineapple chunks, drained
- 1 cup nonfat sour cream
- 3 tablespoons cider vinegar
- 2 tablespoons sugar
- 1 tablespoon dry mustard
- 1/8 teaspoon salt
- 2 tablespoons peanuts, dry-roasted unsalted, chopped
Instructions
- Toss the cabbages and red pepper in a large salad bowl.
- Combine the pineapple, sour cream, vinegar, sugar, dry mustard and salt in a medium mixing bowl and mix well. Fold into the cabbage mixture. Chill, covered, for 4 hours or longer.
- Sprinkle with the peanuts just before serving.
