Spinach Pesto



  • 1/3 cup shelled walnuts
  • 2 large cloves garlic
  • 1/3 cup water
  • 2 cups spinach leaves, firmly packed
  • 1/2 cup olive oil
  • 1/4 cup Parmesan cheese
  • 1 teaspoon salt


  1. In blender or food processor, chop walnuts and garlic with the water.
  2. Add spinach gradually and alternately with the oil. Process until smooth.
  3. Add cheese and salt. Whirl to blend.
  4. Toss with hot spaghetti noodles.
