Butterscotch Apple Pecan Cobbler

Ingredients

Filling

  • 2 cups (12 ounce package) butterscotch chips
  • 1/4 cup firmly packed brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 2 1/2 pounds tart apples, peeled and diced

Topping

  • 1/2 cup all-purpose flour
  • 1/4 cup firmly packed brown sugar
  • 4 tablespoons (1/2 stick) butter
  • 1 cup chopped pecans
  • 3/4 cup quick or old fashioned oats, uncooked

Instructions

  1. Heat oven to 375 degrees F.

Filling

  1. In a small bowl, combine butterscotch chips, brown sugar, flour and cinnamon; set aside.
  2. Place apples in 13 x 9 inch baking pan; sprinkle butterscotch chips mixture over apples.
  3. Bake for 20 minutes.

Topping

  1. Combine flour and brown sugar; cut in butter until crumbly.
  2. Stir in pecans and oats; sprinkle over apple mixture.
  3. Bake for 30 to 40 minutes until apples are tender.
  4. Cool slightly.
  5. Serve with ice cream or whipped cream.
