Down Home Apple Cobbler



  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 1/2 cups rolled oats
  • 3/4 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour


  • 8 large Granny Smith apples, peeled and sliced
  • 1 cup brown sugar
  • 1 1/2 teaspoons cornstarch
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon allspice
  • 1 cup red hots
  • 1/4 cup butter


  1. Heat oven to 350 degrees F.
  2. Topping: Using electric mixer on medium speed, beat butter with brown sugar in large bowl until creamy.
  3. Blend in egg and vanilla extract.
  4. Stir in rolled oats, flour and cinnamon thoroughly.
  5. Filling: In large bowl, combine apple slices, brown sugar, cornstarch, cinnamon, allspice and red hots. Mix well. Pour into baking dish.
  6. Slice 1/4-cup butter stick in thin slices and place over apple mixture then top with topping mixture.Spread evenly over apples.
  7. Bake for one hour or until golden brown.
  8. Serve warm with ice cream or whipped cream.

Yield: 12 servings
