Pineapple Cobbler

Ingredients

Filling

  • 1 cup granulated sugar
  • 1/3 cup biscuit baking mix
  • 1 teaspoon grated lemon peel
  • 4 cups fresh pineapple chunks

Topping

  • 3/4 cup biscuit baking mix
  • 2/3 cup granulated sugar
  • 1 egg, beaten
  • 1/4 cup butter or margarine, melted
  • Vanilla ice cream (optional)

Instructions

  1. In a bowl, combine 1 cup sugar, 1/3 cup baking mix and lemon peel.
  2. Stir in pineapple.
  3. Pour into a greased 9-inch square baking dish.
  4. Combine remaining baking mix, sugar and egg. Sprinkle over the top.
  5. Drizzle with butter.
  6. Bake at 350 degrees F for 40 to 45 minutes or until browned.
  7. Serve warm or cold with ice cream.

Yield: 9 servings
