Raspberry Meringue Pie

Ingredients

  • 1 1/4 cups sifted flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup margarine
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 beaten egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 (10 ounce) package frozen raspberries
  • 1/2 cup walnuts, chopped
  • 2 egg whites
  • 2 tablespoons granulated sugar

Instructions

  1. Sift flour, baking soda and salt together.
  2. Cream margarine and 1/3 cup sugar; add vanilla extract.
  3. Beat in egg yolks.
  4. Add sifted ingredients.
  5. Press into 1-inch pie plate.
  6. Mix 1/4 cup sugar and cornstarch in saucepan; add raspberries. Cook over low heat until thick.
  7. Pour over mixture in pie plate.
  8. Top with walnuts.
  9. Beat egg whites; add 2 tablespoons sugar.
  10. Spread over walnuts.
  11. Bake at 350 degrees F for 30 minutes.

Yield: 6 servings
