Apple Pandowdy
Yield: 6 to 8 servings
Ingredients
Filling
Syrup
- 1 cup brown sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1 tablespoon cider vinegar
- 1 tablespoon butter
- 3/4 cup water
- 1 teaspoon vanilla extract
Topping
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 1/2 tablespoons shortening
- 1/2 cup milk
Instructions
Filling
- Pare and slice apples. Place in the bottom of 13 x 9 inch baking dish.
Syrup
- Combine sugar, flour, salt, vinegar and water. Bring to a boil and cook for 2 minutes.
- Remove from heat and add butter and vanilla extract. Cool.
- Pour cooled syrup over the apples.
Topping
- Cut shortening into sifted dry ingredients.
- Add milk and stir only until mixture is wet.
- Drop topping by spoonsful over apple mixture.
- Bake at 400 degrees F for 35 minutes.
- Serve with rich milk or cream.
