Apple Pandowdy

Yield: 6 to 8 servings

Ingredients

Filling

  • 4 cups sliced apples

Syrup

  • 1 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon cider vinegar
  • 1 tablespoon butter
  • 3/4 cup water
  • 1 teaspoon vanilla extract

Topping

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 1/2 tablespoons shortening
  • 1/2 cup milk

Instructions

Filling

  1. Pare and slice apples. Place in the bottom of 13 x 9 inch baking dish.

Syrup

  1. Combine sugar, flour, salt, vinegar and water. Bring to a boil and cook for 2 minutes.
  2. Remove from heat and add butter and vanilla extract. Cool.
  3. Pour cooled syrup over the apples.

Topping

  1. Cut shortening into sifted dry ingredients.
  2. Add milk and stir only until mixture is wet.
  3. Drop topping by spoonsful over apple mixture.
  4. Bake at 400 degrees F for 35 minutes.
  5. Serve with rich milk or cream.
