Strawberry Buckle
Ingredients
Filling
- 4 tablespoons (1/2 stick) butter, softened
- 3/4 cup granulated sugar
- 1 egg, beaten
- 1/2 teaspoon vanilla extract
- 1/2 cup milk
- 2 cups cake flour, sifted
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups fresh strawberries, sliced
Topping
- 4 tablespoons (1/2 stick) butter, softened
- 1/2 cup brown sugar
- 1/3 cup flour, sifted
- 1/2 teaspoon cinnamon
- Dash nutmeg
Instructions
- Filling: In large mixing bowl cream sugar and butter until light and fluffy.
- Blend in eggs and vanilla extract then milk.
- In a separate bowl sift together dry ingredients. Stir into liquid mixture.
- Fold in berries.
- Spread in greased, floured 9-inch square baking pan.
- Topping: Cream butter and sugar.
- Blend in flour and cinnamon. Sprinkle over batter.
- Dash with nutmeg.
- Bake at 375 degrees F for 30 to 35 minutes.
- Serve warm with cream.
