Strawberry Buckle

Ingredients

Filling

  • 4 tablespoons (1/2 stick) butter, softened
  • 3/4 cup granulated sugar
  • 1 egg, beaten
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups cake flour, sifted
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries, sliced

Topping

  • 4 tablespoons (1/2 stick) butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup flour, sifted
  • 1/2 teaspoon cinnamon
  • Dash nutmeg

Instructions

  1. In large mixing bowl cream sugar and butter until light and fluffy.
  2. Blend in eggs and vanilla extract then milk.
  3. In a separate bowl sift together dry ingredients. Stir into liquid mixture.
  4. Fold in berries.
  5. Spread in greased, floured 9-inch square baking pan.
  6. Topping: Cream butter and sugar.
  7. Blend in flour and cinnamon. Sprinkle over batter.
  8. Dash with nutmeg.
  9. Bake at 375 degrees F for 30 to 35 minutes.
  10. Serve warm with cream.
