Brownie Ice Cream Pie

Ingredients

  • 1 1/2 ounces (1 1/2 squares) unsweetened chocolate
  • 3 tablespoons butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped walnuts
  • 1 quart pistachio, mocha or vanilla ice cream
  • Cool Whip
  • Shaved chocolate

Instructions

  1. Melt chocolate and butter in top of double boiler.
  2. Cool slightly; add sugar.
  3. In a bowl beat eggs until foamy; add chocolate mixture and continue beating.
  4. Fold in nuts.
  5. Pour into a greased 9 inch pie plate and bake at 325 degrees F for about 35 minutes.
  6. When cool, fill with ice cream.
  7. Freeze.
  8. To serve, top with Cool Whip and sprinkle with shaved chocolate.
