Impossible Taco Pie

Impossible Taco Pie recipe

Yield: 6 to 8 servings

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 envelope taco seasoning mix
  • 1 small can kernel corn, drained (optional)
  • 1 (4 ounce) can chopped green chiles, drained
  • 3 eggs
  • 1 1/4 cups milk
  • 3/4 cup Bisquick or homemade Biscuit Baking Mix
  • 1 cup shredded Monterey jack or Cheddar cheese

Instructions

  1. Heat oven to 400 degrees F. Grease a 10-inch cast iron skillet..
  2. Cook and stir ground beef and onion until beef is brown; drain.
  3. Stir in dry taco seasoning mix and corn, if using.
  4. Spread in skillet; sprinkle with green chiles.
  5. Beat milk, eggs and baking mix until smooth, 15 seconds in blender on high or for 1 minute with hand beater.
  6. Pour over beef mixture in skillet.
  7. Bake for 25 minutes.
  8. Sprinkle with cheese.
  9. Bake until cheese is golden brown and knife inserted in center comes out clean, 8 to 10 minutes longer.
  10. Cool for 5 minutes.
  11. Serve with sour cream, chopped tomatoes and shredded lettuce if desired.
