Impossible Zucchini-Tomato Pie


  • 2 cups thinly sliced zucchini
  • 1 cup chopped fresh tomato
  • 1/2 cup chopped onion
  • 1/3 cup grated Parmesan cheese
  • 1 1/2 cups milk
  • 3/4 cup Bisquick
  • 3 eggs
  • 1/2 teaspoon salt
  • 1/4 tablespoon pepper


  1. Heat oven to 400 degrees F. Grease a 10-inch quiche dish or pie plate.
  2. Sprinkle zucchini, tomato, onion and cheese into plate.
  3. Beat remaining ingredients until smooth, 15 seconds in blender on high, or 1 minute with hand beater.
  4. Pour into plate.
  5. Bake until knife inserted in center comes out clean - about 30 minutes.
  6. Cool 5 minutes before cutting and serving.
