Special Rum Coffee Pie



  • 50 large marshmallows
  • 1 cup strong coffee
  • 6 tablespoons rum
  • 1 pint whipping cream, whipped stiff
  • Ladyfingers
  • 1/2 pint whipping cream, whipped stiff
  • Toasted slivered almonds


  1. Melt marshmallows in a saucepan lightly sprayed with Pam. Add coffee and rum.
  2. When cool, fold the mixture into one pint of whipped cream.
  3. Pour it into a pie pan that has been lined with ladyfingers.
  4. Top with 1/2 pint whipped cream, and sprinkle with almonds.
