Zucchini Pie

Ingredients

  • 4 cups thinly sliced zucchini
  • 1 cup thinly sliced onion
  • 1/4 cup butter
  • 2 tablespoons parsley flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon basil
  • 1/4 teaspoon oregano
  • 2 eggs
  • 2 cups shredded cheese

Instructions

  1. Sauté zucchini and onion in butter.
  2. Add herbs and mix well.
  3. Spread in pie plate.
  4. Mix together eggs and cheese.
  5. Pour over zucchini.
  6. Bake for 15-20 minutes at 350 degrees F or until set.
