Raspberry Dessert Pizza

Ingredients

  • 1 (18.25 ounce) box white cake mix*
  • 1 1/4 cups quick cooking rolled oats
  • 1/2 cup butter, softened
  • 1 egg
  • 1/2 cup chopped nuts
  • 1/4 cup firmly packed brown sugar
  • 1/2 teaspoon cinnamon
  • 1 (21 ounce) can raspberry pie filling

Instructions

  1. Heat oven to 350 degrees F. Grease a 12 inch pizza pan or a 13 x 9 inch baking pan.
  2. In a large bowl, combine cake mix, 1 cup oats and 6 tablespoons butter at low speed until crumbly. Reserve 1 cup crumbs for topping.
  3. To remaining crumbs blend in egg. Press in prepared pan.
  4. Bake for 12 minutes.
  5. In the same large bowl, add remaining 1/4 cup oats, 2 tablespoons butter, nuts, sugar and cinnamon to reserved crumbs; mix well.
  6. Remove base from oven and spread pie filling evenly over top. Sprinkle with reserved crumb mixture.
  7. Return to oven and bake for 15 to 20 minutes or until crumbs are light golden brown. Cool completely.
  8. Cut into wedges or squares.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
