Popcorn Muffins
Yield: 6 servings
Ingredients
- 1 1/2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 3/4 cup ground popped corn
- 2 tablespoons melted shortening
- 3 teaspoons baking powder
- 1 cup milk
- 1 teaspoon salt
- 1 egg, well beaten
Instructions
- Sift flour; measure and sift with baking powder, salt, and sugar.
- Add milk, popped corn, egg and shortening.
- Fill a well-oiled muffin tins 2/3 full.
- Bake at 425 degrees F for 25 minutes.
