Apple Nut Cake

Ingredients

Cake

  • 1 1/4 cups oil
  • 2 cups granulated sugar
  • 3 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 3 cups cubed, peeled apples
  • 1 cup chopped nuts

Topping

  • 1/2 cup (1 stick) butter
  • 1/4 cup evaporated milk
  • 1 cup brown sugar, firmly packed

Instructions

  1. Mix together well oil, sugar and eggs.
  2. Add remaining cake ingredients and mix well again.
  3. Pour into greased 13 x 9-inch pan and bake at 350 degrees F for 45 to 55 minutes, starting in a cold oven.
  4. Mix together topping ingredients in a saucepan and bring to a boil.
  5. Pour on cake while still cake is still warm.
