Crows Nest Pudding
Ingredients
Batter
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon baking powder
- 1/2 cup milk
- 1 teaspoon vanilla extract
- Butter, the size of a walnut
- All-purpose flour, as needed
Chocolate Pudding Filling
- 1 1/2 cups milk
- 1 1/2 cups water
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon all-purpose flour
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
Instructions
Batter
- Cream the butter and egg; add the sugar and baking powder; mix well; add the milk and vanilla extract; mix well.
- Add enough flour to make a little stiffer than cake batter and bake in 9 x 13 inch pan at 375 degrees F for 20 to 30 minutes.
- When cool cut in little squares and top with filling.
Chocolate Pudding Filling
- Mix sugar, flour, cornstarch and cocoa, add to milk and water and bring to boil, add vanilla extract. Put this on the squares and serve while hot.
