Crows Nest Pudding

Ingredients

Batter

  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Butter, the size of a walnut
  • All-purpose flour, as needed

Chocolate Pudding Filling

  • 1 1/2 cups milk
  • 1 1/2 cups water
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract

Instructions

Batter

  1. Cream the butter and egg; add the sugar and baking powder; mix well; add the milk and vanilla extract; mix well.
  2. Add enough flour to make a little stiffer than cake batter and bake in 9 x 13 inch pan at 375 degrees F for 20 to 30 minutes.
  3. When cool cut in little squares and top with filling.

Chocolate Pudding Filling

  1. Mix sugar, flour, cornstarch and cocoa, add to milk and water and bring to boil, add vanilla extract. Put this on the squares and serve while hot.
