Pineapple Cake



  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking soda
  • 1 (20 ounce) can crushed pineapple, undrained
  • Nuts


  • 1/2 cup margarine
  • 8 ounces cream cheese
  • 1/2 cup confectioners' sugar
  • 1 teaspoon vanilla extract


  1. Cake: Heat oven to 350 degrees F.
  2. Put all of the ingredients into a bowl. Mix well, pour into an ungreased 13 x 9-inch baking pan, and bake for 45 minutes.
  3. Frosting: Cream margarine and cream cheese together.
  4. Add confectioners' sugar gradually.
  5. Add vanilla extract and mix well.
