Swiss Amish Meat Loaf

Ingredients

  • 1 egg
  • 1/2 cup evaporated milk
  • 1/2 teaspoon rubbed sage
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 pounds lean ground beef
  • 1 cup Ritz cracker crumbs
  • 3/4 cup grated Swiss cheese
  • 1/4 cup finely chopped onion
  • 2-3 strips bacon, cut into 1-inch pieces

Instructions

  1. Heat oven to 350 degrees F.
  2. Beat the egg in a large bowl.
  3. Add evaporated milk, sage, salt and pepper, and mix.
  4. Add beef, crumbs, 1/2 cup of the cheese and the onion; blend.
  5. Form into a loaf and place in a 2-quart rectangular baking dish.
  6. Arrange bacon pieces on top of loaf.
  7. Bake for 40 minutes.
  8. Sprinkle remaining cheese on top and bake for 10 minutes longer.
