Zucchini Bread




  1. Beat eggs until foamy. Stir in sugar, zucchini, oil and vanilla extract.
  2. Gradually add dry ingredients and spices.
  3. Stir in nuts.
  4. Pour into bread pans which have been greased only on the bottoms.
  5. Bake at 325 degrees F for 60 to 80 minutes.
  6. Cool for 10 minutes.
  7. Remove from pans and cool completely.

Makes 2 loaves.
