Shaker Corn Relish


  • 4 cups sugar
  • 4 cups vinegar
  • 1 tablespoon plain salt
  • 1 tablespoon celery seed
  • 1 teaspoon turmeric
  • 2 tablespoons dry mustard (optional)
  • 4 cups onions, chopped
  • 4 cups tomatoes, chopped
  • 4 cups cucumbers, chopped
  • 4 cups corn
  • 4 cups cabbage, chopped


  1. In a large Dutch oven combine the sugar, vinegar and spices and bring to the boiling point.
  2. Add the vegetables and cook for 25 minutes, stirring occasionally.
  3. Pack into hot scalded jars and seal.

Yield: 12 pints
